Need to embed subtitle in a video

hey guys,,
I need to embed subtitle in a video and i want to disable it when ever i want..
its called soft subs (i think)
does any one know how to do it easily
please help me

If you don't mind .mkv output, mkvmerge will do it for you.
Drop the video and sub file into mkvmerge, then you can set the track flags, ie. whether to display the subs by default or not. Press mux and off you go.

I honestly prefer the older versions (to reduce playback compatability issues) from before matroska v4 was introduced (2013).
