My girlfriend have Macbook Pro about 2011. I think it run OSX Snow Leopard or Lion. She want to update her Macbook OS to newer, maybe El Capitan if is possible.
But, she have some cracked software like InDesign. She really needs this Indesign but she have fear that update the OS break this. What will happen? Will the cracked software stop working or break? What can she do?

If you are not sure about software working, I would recommend using a virtual machine tester program like Virtualbox. It's for installing an OS within an OS, simulating a desktop environment.

I suppose you/your girlfriend can try installing it at first. Your questions seem to suggest that you're very hesitant. In the world of computers, whether it's MacOSX, Windows, or GNU/Linux, you shouldn't be. If it doesn't work, there's always us to help you.

Updating an OS usually does not cause cracked software to stop working.
Mac and Windows are starting to be good about making things backwards compatible, so if it worked on an older OS it should work on the newer one.
Either way consider checking to see if there is an updated and cracked version of InDesign. Updated versions may have better OS compatibility.

She sees it as a big risk because she cannot afford to lose Indesign especially (she have a couple of other cracked things too), so yes we are hesitatn
If we instal, can we go back?

Depends, but for the most part, you should be able to revert from the update.
If you want to take the safe road, I suggest to wait until someone releases a cracked .dmg/update of El Capitan (which should be soon) that will have the best capability to run cracked software.
That or, as RobertX suggested, test the upgrade in a VM. In about a hour, two hours tops, you'll have your answer.

I wouldn't even consider this an option. There is no such thing as a "cracked" OS X that would be anything other than a potential malware fest.
OS X has been free for the last 3 or 4 versions, and there is nothing you can do to it to make it more capable of running cracked software.
If any software doesn't run on 10.11, it is very likely than the software package is incompatible, cracked or not.
The best way to upgrade OS X is to make a backup using something like Carbon Copy Cloner or SuperDuper. (something every Mac user should be doing already)
Then upgrade to 10.11. Try everything out. If it does't work, restore from the backup.
You could take the VM path as well, but that will be a lot more time consuming.
