I do get the gist of the importance of stealth-checking, when it comes to playing online.
However, I don't intendo to play online, so I wonder, why would it still be important for me.

Stealth patching is just a extra procedure that peeps take to avoid console ban while being connected online. If you don't connect your xbox360 to live, you won't get your console banned.
so if your not even going to connect your console online (non-multiplayer), then you don't need to use it.

You can still system link over pirated games, just make sure that none of the xbox360s are connected to live.

Do they both have to pirated? Can one be real and the oher pirated, or both real?
Or is anything but XBOX Live?

It doesn't matter if one copy is real while the other is pirated or if all copies are real/pirated, system link will work. Tried it with Halo Reach one time, brought my console & tv to a friend's house, my pirated copy was able to system link with other real copies, so it will work.
Non-modded xbox360s (with internet connection/live) can play with modded xbox360s (no internet/WiFi/Ethernet) via system link.

EDIT: I'm glad people still have LAN parties! I don't have those anymore when my friends moved out of town onto bigger and better things.
