Don't know about the others, but there is free and open source program will "rip" DVD/Blu Ray files.
This program is named Handbrake. Are you looking for that? In this case, use it. handbrake.fr Hope this helps. EDIT: Make sure you use AnyDVD when ripping

For Blurays what i know best and what i used isĀ
1) Use TSMuxer to remux the movie as .ts file from the disc 2) Use Mkvtoolnix to convert .ts to .mkv and you can add or remove audio there This process is not at all "COnverting" or "Encoding" at all, you're just extracting movie files from full bluray disc to .ts and finally .mkv. The quality will be intact. And handbrake is an encoding software. It's good for beginners but if you want to go deep you can use megui If you ant more help I'd be happy to

Bastard.
What do you do with your extracted files that are extracted from Blu Ray, hobs2910? Do you keep them on a hard drive, or do you burn them to disc again? Forget about it.

I hope this is not too off-topic, but do you play your files through a Blu Ray player and still manage to circumvent Cinavia?
