That is correct. After you make your changes, it will have a new hash.

Is there a simple non-destructive way to simply re-name a torrent as it appears on TBP lists? I don't want to take it down or even interrupt the seeding i just started. It is a huge torrent.

Deleting and re-uploading a torrent is currently the only way you can change the title. You needn't worry--it doesn't interrupt seeding in any way.
