Arcade-style Controllers Usage Patterns

I have a PS2, SNES, Dreamcast, Original XBOX, and XBOX 360, and I can recall having one or two games that are members of the Capcom's Street Fighter franchise.

Right now, I have a fistful of dollars and I can use a SF2-based controller any time soon. However, my current dilemma is that if I manage to get the device, I might want to be able to use it for other stuff. Then again, I can use my standard-issue controllers for those.

Does anyone have an arcade stick for your console system(s) and, if so, how do you use it?

I don't, but they all use an electric interface to just emulate the console's controller - So they can be either specific for a console, or have a switchable wiring.
OR you can cut the wires and re-route them yourself, with a console connector specs sheet.

And if you got a dough, why not buying some real arcade style machine? Or an emulated one?

I don't have a dough, so I can't buy arcade machines for different games that I play on each system.
